Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Crab apples
Provide the natural pectin and acid that let the juice set into a jelly.
Sugar
Adds sweetness and helps the juice thicken into a firm, preserved gel.

The step that matters

Boil the juice briskly with the sugar. Jelly sets only when enough sugar, pectin and acid are concentrated by boiling. Undercooking leaves a runny jelly that will not firm up as it cools.

Swap the apple
