Ingredients

Directions

The book says “a very slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Cut out the blossom from the crab apples, leaving the stem on.

  2. Cover the bottom of an earthenware crock with water.

Layer and bake

  1. Layer the apples in the crock, covering each layer with a thick layer of sugar.

  2. Continue layering until the crock is full.

  3. Cover the crock and bake for 8 to 10 hours at 300°F (150°C).

Store

  1. Once cool, store in a dark, cool place.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Crab apples
Provide the fruit that is cooked until tender and preserved in syrup.
Sugar
Draws moisture out of the fruit and preserves it while adding sweetness.

The step that matters

Layering the sugar. A thick layer of sugar over each tier of apples helps draw out moisture and form syrup, which protects the fruit during long, slow baking.

Swap the apple
