The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare and shape

  1. Chop the veal finely.

  2. Roll the crackers and mix half with the veal, eggs, pepper, salt, and butter.

  3. Form the mixture into a solid loaf.

  4. Spread the remaining crackers smoothly over the outside of the loaf.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf, giving it substance and a meaty texture.
Crackers
Absorb moisture and help bind the meat so the loaf holds its shape.
Eggs
Bind the mixture together and set during baking to hold the loaf firm.
Butter
Adds fat and moisture, keeping the loaf tender and rich.

The step that matters

Form the mixture into a solid loaf. Packing the mixture firmly removes air pockets and lets the eggs and crackers bind the meat. A loose mixture can crumble when baked and sliced.
