Why it works: Pineapple and coconut match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 651 recipes. Both carry delta-dodecalactone, which smells sweet, creamy. The science ↓

Ices and Ice Creams

Ingredients

Directions

Prepare

  1. Freeze the cream in a freezer to ensure quick freezing.

  2. Avoid letting salt or water enter the freezer.

  3. For berry flavors, sprinkle whole berries with sugar, mash, strain the juice, and mix it into the cream.

  4. For a quart of cream, use a quart of fruit and a pound of sugar.

Freeze and finish

  1. For coconut cream, grate coconut and add it to the cream and sugar just before freezing.

  2. Add 1 pint of whipped cream and 1 cup of sweetened whole berries to the mixture as it begins to set.

  3. You can also add 1 pint of finely cut berries or peaches to ordinary ice cream while freezing.

  4. If the cream melts while serving, beat it from the bottom with a long wooden paddle.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Forms the rich, smooth base; its fat keeps the frozen texture creamy.
Sugar
Sweetens the mixture and lowers the freezing point, keeping the ice cream softer.
Fruit
Adds flavor and acidity, and its juice is strained into the cream for taste.
Whipped cream
Adds air and lightness, giving a softer, less dense texture.

The step that matters

Freeze the cream quickly in a cold freezer. Fast freezing keeps ice crystals small, so the ice cream stays smooth. Salt or water entering the freezer can slow freezing and make the texture grainy or icy.

Swap the peach

The recipe marks peach as optional. How well each one fits the dish's main ingredients (cream, pineapple, sugar, arrowroot, rose, coconut):

  1. Vanillafits better
  2. Strawberryfits better
  3. Limefits better
  4. Peachthe original

Fit is the average pairing score against cream, pineapple, sugar, arrowroot, rose, coconut. Candidates are from the same food group and used in at least 100 recipes.
