Why it works: Cream and sugar are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 43,450 recipes. Both carry 2,3-butanedione, which smells butter, sweet. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Old efyson tea
- Supplies the main tea flavour, infused into the cream by steeping and scalding.
- Cream
- Carries the tea flavour and gives the ice cream its rich, smooth body.
- Eggs
- Thicken the custard base and add richness and structure to the frozen cream.
- Sugar
- Sweetens the base and lowers its freezing point, keeping the ice cream softer.
The step that matters
Scaling the eggs into the hot cream. If the cream is too hot when the beaten eggs go in, the eggs can scramble instead of thickening smoothly. Keeping the mixture hot but not boiling and stirring steadily helps the custard set evenly.
