What each ingredient does

Oysters
Provide the main flavour and the briny, savoury character of the sauce.
Flour
Thickens the liquid into a smooth, lightly bodied sauce when cooked.
Butter
Adds fat for a rich, smooth mouthfeel and a silkier finish.
Milk or cream
Adds moisture and creaminess, softening the sauce's flavour and texture.
Lemon
Adds acidity that brightens the rich, briny flavours.

The step that matters

Thicken with flour mixed with cold water, stirring well.. Flour mixed directly into hot liquid forms lumps, because its starch grains clump before they can hydrate. Mixing it with cold water first and stirring well keeps the sauce smooth as it thickens.
