TOMATO SAUCE

Ingredients

  • ½ can tomatoes
  • 1 cup water
  • 2 allspice berries
  • 2 peppercorns
  • 2 cloves
  • 1 sprig parsley
  • 1 tablespoon chopped onion
  • 1 tablespoon butter
  • 1 heaping tablespoon corn starch
  • Salt to taste
  • Pepper to taste
  • Cayenne to taste

Directions

In a granite saucepan, combine the tomatoes, water, allspice, peppercorns, cloves, and parsley. Bring to a boil.

In a separate pan, fry the chopped onion in butter until yellow.

Add the corn starch to the onions and stir well.

Combine the onion mixture with the boiling tomato mixture and simmer for 10 minutes.

Season with salt, pepper, and a little cayenne.

Strain the sauce over boiled meat or fish.
