What each ingredient does

Veal
Forms the wrapper and the main body of the rolls, becoming tender when simmered.
Pork
Adds fat and moisture to the chopped filling so it stays juicy during cooking.
Cracker crumbs
Absorb meat juices and help the filling hold together without being dry.
Egg
Binds the filling so it holds together when rolled and cooked.
Cream
Forms a simmering liquid that moistens the rolls and builds a rich sauce.
Flour
Coats the rolls so they brown in the butter and can thicken the cream.

The step that matters

Fry in butter until golden brown. Browning the flour-coated surface creates flavor and color through the Maillard reaction. Frying too gently leaves the rolls pale and bland before simmering.
