Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the batter

  1. Cream together the sugar and butter until light and fluffy.

  2. Add the eggs one at a time, mixing well after each addition.

  3. Gradually add the flour, salt, mace, and nutmeg, mixing until just combined.

  4. Pour the batter into two narrow loaf pans.

Bake

  1. Bake for about 1 hour or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air, giving the cake a tender, rich crumb.
Eggs
Add structure and richness as they set in the oven, binding the batter.
Flour
Provides the structure that holds the cake together as it bakes.
Sugar
Sweetens the cake and helps create a light texture when creamed with butter.

The step that matters

Adding the eggs one at a time. Adding eggs gradually lets each one emulsify fully into the creamed butter and sugar. Adding them all at once can cause curdling, which may leave the batter coarse and uneven.

Swap the mace

How well each one fits the dish's main ingredients (sugar, butter, egg, flour, nutmeg):

  1. Cinnamonfits better
  2. Cardamomfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against sugar, butter, egg, flour, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
