Baked Custard

Oven, in the book's wordsA very moderate oven

Ingredients

Directions

The book says “a very moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Make the raw custard using 6 eggs and omit the corn starch.

  2. Strain the mixture into a mold or cups.

  3. Place the mold in a deep pan and fill it two-thirds with boiling water.

  4. Bake in a moderate oven at 350°F (175°C).

  5. Test often with a knife and remove when the blade comes out smooth and clean.
