What each ingredient does

Oat meal
Provides the grain base, and its starch thickens the water into a porridge as it cooks.

The step that matters

Cook for twenty minutes, stirring often. Oat starch thickens as it heats and can settle, scorch, or form lumps on the bottom of the pan. Frequent stirring spreads the heat evenly and keeps the porridge smooth.
