Why it works: Potato and onion are a kitchen classic. They rank in the top 3% of all ingredient pairs, and cooks put them together in 9,023 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Beefsteak Pie

Ingredients

Directions

  1. Stew the beef steak and cracked bone in enough water to cover until the meat is half done.

  2. Parboil the potatoes in a separate pot.

  3. If using a bottom crust, line a pudding dish with pie crust.

  4. Layer the beef in the dish, seasoning with salt, pepper, and a little chopped onion.

  5. Add a layer of sliced potatoes, scattering a little butter on top.

  6. Repeat layers until the dish is full.

  7. Pour the gravy from the stewed meat over the layers, discarding the bone and thickening the gravy with brown flour.

  8. Cover with a thicker pie crust, leaving a slit in the middle.
