What each ingredient does

Cucumbers
Form the pickle itself; they turn tender and translucent as they cook in the syrup.
Sugar
Adds sweetness and, dissolved in the syrup, helps preserve the cucumbers and build body.
Vinegar
Provides the sour acidity that defines the pickle and helps preserve it.

The step that matters

Boil the cucumber slices in the syrup until they look clear. Cooking the slices gently in syrup lets sugar slowly replace water in the cucumber tissue, making them clear and firm. Boiling too hard or in too large a batch can break the slices apart or leave them opaque.

Swap the cucumber

How well each one fits the dish's main ingredients (sugar, vinegar):

  1. Mustardfits better
  2. Capsicumfits about as well
  3. Cucumberthe original
  4. Beetrootfits less well

Fit is the average pairing score against sugar, vinegar. Candidates are from the same food group and used in at least 100 recipes.
