What each ingredient does
- Fruit pulp
- Provides the fruit flavor and the body of the wafer mixture.
- Sugar
- Sets into a firm, brittle structure as the mixture cools and dries.
The step that matters
Removing the mixture before it candies. Sugar cooked past the right point turns from a pliable mass into a hard candy, so the wafers become brittle and hard to shape. Pulling the mixture off the heat while it is still pliable keeps it shapeable.
