Raised Pies

Ingredients

Directions

  1. Prepare the pâte brisée and divide it into three parts: one for the bottom, one for the sides, and one for the top.

  2. Roll out the bottom crust and place it in a large pie dish.

  3. Layer pounded bacon on the bottom crust.

  4. Form the sides by rolling out a thick band of dough, moisten the edge of the bottom crust, and attach the band vertically inside the dish.

  5. Create a decorative border by rolling a thin cord of dough and pressing it around the edge.

  6. Fill the pie with your chosen meat, ensuring it is evenly distributed.

  7. Cover the meat with thin slices of fat bacon before placing the top crust on without pressing it down.

  8. Trim the edges of the top crust with scissors to fit the pie.
