What each ingredient does

Fowl
Forms the main body of the dish, and its meat becomes tender and firm as it cooks.
Lemon
Its juice adds acidity that brightens the flavor of the meat.
Onion
Releases aromatic flavor into the cooking water, seasoning the chicken from around it.

The step that matters

Boil the fowl slowly until fully cooked. Boiling hard toughens meat and can break the skin apart, while a gentle simmer cooks the bird evenly and keeps it moist and tender. Cooking until the meat is fully done matters for safety.

Swap the onion

How well each one fits the dish's main ingredients (lemon, bread, pepper, butter):

  1. Capsicumfits better
  2. Asparagusfits better
  3. Shallotfits better
