What each ingredient does

Mutton cutlets
The main meat, which is shaped around the bone and then cooked through.
Eggs
Bind the bread crumbs to the meat so the coating holds during frying.
Bread crumbs
Form a crisp, golden crust that protects the meat while it fries.
Butter or fat
Conducts heat for frying and drives browning of the crumb coating.

The step that matters

Frying until golden, not too dark. Bread crumbs brown quickly because of sugars and proteins at the surface. High heat or long frying can scorch the crust before the meat is cooked through, so use enough fat and watch the colour closely.

Swap the parsley

The recipe marks parsley as optional. How well each one fits the dish's main ingredients (mutton, egg, bread, pepper, butter, shallot):

  1. Parsleythe original
  2. Capersfits about as well
  3. Tarragonfits less well
  4. Nutmegfits less well

Fit is the average pairing score against mutton, egg, bread, pepper, butter, shallot. Candidates are from the same food group and used in at least 100 recipes.
