Mutton Cutlets

Ingredients

Directions

  1. Trim the mutton cutlets and dip them in beaten eggs.

  2. Coat the cutlets with a mixture of finely minced ham and truffles.

  3. After 15 minutes, dip the cutlets in egg again and then coat with chapelure.

  4. Cut heart-shaped pieces of white paper, oil them with butter or salad oil, and place a cutlet in each.

  5. Fold the edges of the paper securely and broil the cutlets until done.

  6. For variation, dip the cutlets in batter and fry them instead of broiling.
