Mutton Cutlets

Ingredients

Directions

  1. In a stewpan, melt some butter and add the mutton cutlets, turning them until well coated.

  2. Add a small amount of stock or gravy and let the cutlets simmer until cooked through.

  3. If needed, thicken the gravy with a little flour before serving.

  4. For braising, place untrimmed cutlets over bacon slices with onions, carrots, herbs, pepper, salt, and spices.

  5. Moisten with a small amount of stock or water and braise gently until done.

  6. Once cooked, place the cutlets between two plates with a weight until cool, then trim neatly.

  7. Strain the braising gravy, removing fat, and set aside.

  8. Mince equal parts shallots and mushrooms, sauté shallots in butter until golden, then add mushrooms, pepper, salt, spices, and parsley.

  9. Moisten with some gravy, add a squeeze of lemon, and let cool.

  10. Coat the cutlets with the mince, wrap in oiled paper, and broil until hot, or heat in the oven.
