Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Beef Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Cut the beef into thin slices.

  2. Place a small piece of fat and a pinch of herbs on each slice.

  3. Roll up the slices and layer them in a greased pie dish rubbed with shallot.

  4. Cover the first layer with a thick layer of calves'-foot jelly.

  5. Add a second layer of rolled beef and more jelly on top.

  6. Make a crust with egg, butter, flour, and salt, and cover the pie.

  7. Decorate and brush with diluted egg yolk.

  8. Bake at 350°F (175°C) until golden.
