What each ingredient does

Rice
Starch that absorbs the stock and swells, giving the dish its creamy, tender body.
Stock or broth
Liquid that cooks the rice gradually, supplying moisture and savoury flavour.
Parmesan
Melts into the hot rice, adding salty, savoury richness and creaminess.
Butter
Adds fat for richness and a smooth, glossy finish.
Onion
Softened and browned in butter, building a sweet savoury base.
Saffron
Gives the rice its golden colour and a distinctive floral aroma.

The step that matters

Adding the stock gradually. Adding the liquid a little at a time lets the rice release starch and absorb liquid evenly, so it becomes creamy and tender rather than soupy or unevenly cooked.
