What each ingredient does

Eggs
Egg proteins set with gentle heat, forming the firm white around a soft yolk.
Bread
Toasted bread gives a crisp, sturdy base that holds the poached egg.
Butter
Adds fat and rich flavour to the toast and helps it brown.

The step that matters

Boiling the eggs until the white is set. Egg white proteins set with heat, and the water temperature controls how fast. Too much heat for too long makes the white rubbery and can overcook the yolk, so the eggs must be checked as the white firms.
