Snow Balls

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the rice

  1. Wash the rice.

  2. Boil the rice in the boiling water for 15 minutes.

  3. Strain off the water (use it to thicken soup).

Shape and bake

  1. Grease eight cups lightly with clarified fat.

  2. Fill each cup with rice, pressing it down with a spoon.

  3. Bake in the oven at 400°F (200°C) for 5 minutes.

  4. Turn the rice out whole and place a little jam on top of each.

What each ingredient does

Rice
Cooked starch packs together and sets as it cools, so the shape holds when turned out.
Jam
Adds sweetness and fruity flavour on top of the rice.
Clarified fat
Greases the cups so the rice releases cleanly and its surface can brown lightly.

The step that matters

Pressing the rice into the cups. Firm pressing removes air gaps and packs the cooked starch closely, so the rice binds and holds its shape when turned out. Loose filling can crumble.
