Why it works: Almond and rose are a kitchen classic. They rank in the top 11% of all ingredient pairs, and cooks put them together in 1,465 recipes. Both carry eucalyptol, which smells eucalyptus, herbal. The science ↓
French Macaroons
Ingredients
Directions
The book says “a good oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Preheat the oven to 400°F (200°C).
Remove the gills from the almonds and grind them finely with rose or orange-flower water.
Make and shape the mixture
In a bowl, combine the ground almonds, egg whites, and sugar, beating well.
If the mixture runs into shape, it's ready; if too stiff, add one more egg white.
Spoon the mixture onto wafer-paper in oval shapes.
Bake
Dust sugar on top and bake until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Almonds
- Provide the ground base that gives the macaroons their body and nutty flavour.
- Egg whites
- Provide structure and lift, binding the almond and sugar mixture into a shapeable batter.
- Sugar
- Adds sweetness and helps the tops brown to a golden colour in the oven.
The step that matters
Judging the consistency of the mixture. If the batter is too stiff it will not spread into smooth shapes, and if too loose it will run flat. Checking how it flows before baking determines whether the macaroons hold their form and rise properly.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
