Why it works: Sugar and almond are a kitchen classic. They rank in the top 18% of all ingredient pairs, and cooks put them together in 15,679 recipes. Both carry 1-penten-3-one, which smells fish, pungent. The science ↓
Almond Meringue Mixture
Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Make the meringue
Combine 2 egg whites and a pinch of salt in a mixing bowl.
Whip until stiff peaks form.
Gradually add ¼ pound of caster sugar while continuing to whip until fully incorporated.
Fold in 1 ounce of blanched and finely shredded almonds.
Pipe and bake
Transfer the mixture to a piping bag fitted with a large plain tip.
Pipe the mixture onto cold waxed baking sheets in desired shapes.
Dust lightly with Marshall's Icing Sugar.
Bake in a preheated oven at 350°F (175°C) until golden brown.
Allow to cool before serving or using as a cake filling.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Egg whites
- Whipped into a foam that gives the meringue its airy structure and lift.
- Caster sugar
- Stabilizes the whipped foam and adds sweetness, helping it set and brown in the oven.
- Blanched almonds
- Add texture and nutty flavour to the meringue.
The step that matters
Adding the sugar gradually while whipping. Sugar added slowly dissolves into the egg white foam and stabilizes it. Adding it too fast or too late can leave the foam weak or grainy, so the meringue may collapse or fail to hold its shape in the oven.
Swap the almond
How well each one fits the dish's main ingredients (egg, sugar):
- Pecansfits about as well
- Almondthe original
- Chestnutfits about as well
- Milletfits less well
Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
