Puff Paste

Ingredients

Directions

  1. In a bowl, rub ⅛ cup of butter into the flour until combined.

  2. Add enough cold water mixed with cream of tartar to form a soft dough.

  3. Dust the dough with flour and fold it several times until tough and springy.

  4. Let the dough rest for 2-3 minutes to become pliable.

  5. Roll out the dough to about ¼ inch thick, keeping it square and straight.

  6. Roll the remaining butter into a flat square, about two-thirds the size of the dough.

  7. Dust the butter with flour and place it on the dough.

  8. Fold the dough over the butter to completely enclose it.
