Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Puff Paste for Patties

Ingredients

Directions

  1. Make puff paste by mixing 1 lb of butter with 1 lb of flour.

  2. Cut lean beef finely, removing skin and sinew; chop a little fat if desired.

  3. Mince a small onion and some parsley; add pepper and salt to taste.

  4. Mix a tablespoon of suitable sauce with enough water to make gravy.

  5. Combine the meat with the gravy before placing it into patty pans.

  6. Line the bottom of the patty pans with the puff paste, then add the moist meat mixture.

  7. Cut out tops from the puff paste and place them on the filled pans, pressing the edges to seal.

  8. Wash the tops with yolk of egg thinned with water.
