Macaroni, Timbale of

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Mix ½ pound of flour with 5 egg yolks to make nouilles paste.

  2. Line a plain mould with short paste made from ½ pound of flour, ¼ pound of butter, and 1 egg yolk.

  3. Fill the lined mould with flour and bake in a 350°F (175°C) oven for about 1 hour.

  4. Remove from oven, empty the flour, and dry the mould in a very slack oven.

  5. Fill the mould with boiled macaroni mixed with milk, vanilla, sugar, and Parmesan cheese, ensuring it absorbs the moisture.
