Boiled Beef

Ingredients

Directions

  1. Put fresh beef into boiling water and bring it to a boil quickly.

  2. Reduce heat and simmer gently for 10 to 12 minutes per pound, plus an additional 10 minutes.

  3. For salted beef over 8 pounds, start in lukewarm or cold water and simmer from boiling.

  4. Skim the pot thoroughly and turn the meat twice during simmering.

  5. If using, add carrots or turnips long enough to cook properly.

What each ingredient does

Fresh beef
Is the main cut that is cooked gently in simmering water until tender.

The step that matters

Simmer gently after the initial boil. Once the pot reaches a boil, reducing the heat to a gentle simmer keeps the meat tender; a hard boil toughens muscle fibers and can make the meat stringy.

Swap the carrot

The recipe marks carrot as optional. How well each one fits the dish's main ingredients (beef, turnip):

  1. Leekfits better
  2. Carrotthe original
  3. Parsnipfits about as well
  4. Chivefits about as well

Fit is the average pairing score against beef, turnip. Candidates are from the same food group and used in at least 100 recipes.
