Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beefsteak
Provides the main meat body and firm, sliceable structure once cooked.
Bacon
Adds fat that keeps the meat moist and carries savory flavour through the loaf.
Bread crumbs
Absorb liquid and fat, helping the mixture hold together and stay tender.
Beaten eggs
Bind the mixture as they set, giving the galantine its cohesive structure.

The step that matters

Tie the cloth securely before boiling. A loose wrap lets water enter and the mixture can fall apart. Firm, even packing and a snug tie help the meat bind as it cooks and hold a clean shape when pressed.

Swap the allspice

How well each one fits the dish's main ingredients (egg, pepper, nutmeg, bread):

  1. Cinnamonfits better
  2. Parsleyfits about as well
  3. Marjoramfits about as well
  4. Allspicethe original

Fit is the average pairing score against egg, pepper, nutmeg, bread. Candidates are from the same food group and used in at least 100 recipes.
