Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein and meat that the sauce simmers into tenderness.
Flour
Coats the chicken so it browns during frying and helps thicken the sauce.
Milk
Forms the base of the sauce, adding moisture and a creamy texture.
Mustard
Adds sharp, savoury flavour that balances the richness of the sauce.

The step that matters

Draining the fat before adding the sauce. Leaving too much fat in the pan makes the sauce greasy and can keep the coating from staying crisp, so draining off the fat first matters.

Swap the mustard

How well each one fits the dish's main ingredients (chicken, flour, butter, milk, sauce, sugar):

  1. Potatofits better
  2. Capsicumfits better
  3. Arrowrootfits about as well
  4. Mustardthe original

Fit is the average pairing score against chicken, flour, butter, milk, sauce, sugar. Candidates are from the same food group and used in at least 100 recipes.
