Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Thicken the dressing as they cook and set, giving it body.
Vinegar
Adds acidity that gives the dressing its tangy flavour.
Milk
Dilutes the mixture and adds softness and richness to the texture.
Butter
Adds fat for richness and a smoother mouthfeel.

The step that matters

Cook over low heat while stirring. Egg proteins set at moderate temperatures, so gentle, constant stirring over low heat thickens the dressing smoothly. Higher heat or no stirring can scramble the eggs into lumps.

Swap the mustard

How well each one fits the dish's main ingredients (egg, sugar, pepper, vinegar, milk, butter):

  1. Capsicumfits better
  2. Potatofits about as well
  3. Mustardthe original
