What each ingredient does

Minced beef
Provides the main meaty body and firm structure once cooked.
Minced ham
Adds savoury, salty flavour and helps bind the meat together.
Bread crumbs
Soak up moisture and help hold the mixture together so it slices cleanly.

The step that matters

Press firmly into the mold. Pressing removes air pockets and packs the mixture tightly, so it holds together when turned out and sliced instead of crumbling.
