Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Cream the butter and sugar together.

  2. Add the flour and eggs, then mix well.

  3. Stir in the milk and beat until smooth.

Bake and serve

  1. Butter some saucers and half-fill them with the batter.

  2. Bake in a 400°F (200°C) oven for 15 minutes.

  3. Remove from saucers and fold in half.

  4. Serve on a doily with cut lemon and castor sugar.

What each ingredient does

Eggs
Bind the batter and help it set and rise as it bakes.
Flour
Provides the structure that holds the baked pudding together.
Butter
Adds richness and flavour, and helps the creamed mixture hold air.
Milk
Thins the batter to a pourable consistency and adds moisture.
