Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Beat the yolks of the eggs with the sugar until creamy.

  2. Sift the flour and baking powder together.

  3. Beat the egg whites until stiff peaks form.

  4. Gradually fold the egg whites into the yolk and sugar mixture, adding the flour at the same time.

  5. Bake in a 400°F (200°C) oven for 30 minutes.
