What each ingredient does

Marrow
Forms the body of the preserve, softening into tender pieces as it cooks in syrup.
Sugar
Sweetens the preserve and, as it dissolves into syrup, draws out moisture and helps it set.
Lemon
Adds acidity and brightness that balances the sweetness and helps the preserve keep its flavour.
Spirits
Adds aroma and flavour when added late, so the alcohol is not boiled off.

The step that matters

Add the spirits just before finishing. Alcohol is volatile and evaporates during long boiling, so adding the spirits late keeps more of their aroma and flavour in the finished preserve.

Swap the saffron

How well each one fits the dish's main ingredients (sugar, pepper, lemon, ginger, spirit):

Fit is the average pairing score against sugar, pepper, lemon, ginger, spirit. Candidates are from the same food group and used in at least 100 recipes.
