What each ingredient does

Sweetbread
Forms the main body of the dish; its tender texture comes from gentle simmering and slow stewing.
Flour
Thickens the milk into a smooth, cohesive sauce that coats the sweetbread.
Milk
Forms the base of the sauce, giving it a creamy, mild richness as it reduces.
Onion
Infuses the milk with savoury aroma during boiling, then is strained away.

The step that matters

Stir the flour mixture into the boiling milk. Flour must be fully dispersed in cold milk before it meets hot liquid, otherwise it clumps. Stirring while the sauce thickens keeps the starch evenly distributed so the sauce turns smooth rather than lumpy.

Swap the onion

How well each one fits the dish's main ingredients (flour, milk, thyme, lemon, pepper):

  1. Arrowrootfits better
  2. Shallotfits better
  3. Parsnipfits better
  4. Onionthe original

Fit is the average pairing score against flour, milk, thyme, lemon, pepper. Candidates are from the same food group and used in at least 100 recipes.
