What each ingredient does

Fish
The main ingredient, cooked gently in water until it is tender and flaky.
Vinegar
Adds a light acidity that brightens the flavour of the fish.

The step that matters

Check doneness with a knitting needle. Fish cooks quickly and can overcook into dry, crumbly flesh. A needle passing through easily shows the flesh is just tender, so the fish should be checked before it is lifted from the pot.
