Why it works: Wheat and rye match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 404 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Rye Bread

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Prepare a sponge as you would for wheat bread and let it rise overnight.

  2. Mix the sponge with rye flour until the dough is not as stiff as wheat bread.

  3. Place the dough in deep pie-tins or small pudding-pans and let it rise again.

  4. Bake in a moderate oven at 350°F (175°C) until done.
