Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped or beaten into the batter to add lift and a light, tender crumb.
Butter
Creamed with the sugar to add richness and a tender texture.
All-purpose flour
Provides the structure that holds the cake together as it bakes.
Baking powder
Releases gas in the batter so the cake rises and becomes airy.
Sugar
Sweetens the cake and helps it brown and keep moisture.
Sweet chocolate
Flavours one half of the batter, giving the dark layer its chocolate taste.

The step that matters

Beat the butter and sugar until light. Creaming beats air into the fat and sugar, and that trapped air helps the cake rise and stay light. Under-beating leaves a dense cake.
