Creams and Custards

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Beat the eggs, separating the yolks and whites, and set aside.

  3. Soak the gelatine in cold water or milk for 1 hour, then dissolve it in a warm place.

  4. In a custard kettle, heat the milk until it foams, then add the sugar.

  5. Gradually mix the hot milk into the beaten yolks, then combine with the dissolved gelatine.

  6. Pour the mixture into a baking dish and bake until firm in the center, about 30-40 minutes.
