Beef a LA Mode

Ingredients

Directions

Prepare the beef

  1. Cut deep openings in the beef and stuff with diced pork seasoned with salt, pepper, cloves, and nutmeg.

  2. In a stew pan, layer pork, onions, lemon, carrots, and bay leaf.

Braise

  1. Place the beef on top and cover with bread crust, wine, vinegar, and enough water or broth to cover half the meat.

  2. Cover the dish tightly and cook until the meat is tender.

Finish the gravy

  1. Remove the meat, strain the gravy, skim off the fat, and add sour cream or optional ingredients.

  2. Return the gravy to the pan and cook for an additional 10 minutes.

What each ingredient does

Beef (rump)
Forms the main body of the dish and becomes tender through slow, covered cooking.
Wine
Adds acidity and aroma to the braising liquid, helping build the gravy's flavour.
Vinegar
Adds sharp acidity that balances the richness of the meat and gravy.
Bread crust
Helps thicken the gravy as it breaks down during cooking.
Onion
Adds sweetness and savoury depth to the braising liquid as it softens.
Carrots
Contribute natural sweetness and body to the gravy.

The step that matters

Cover the dish tightly and cook until the meat is tender. Tight covering keeps steam and liquid around the meat so it braises rather than dries out. Slow, moist heat breaks down tough connective tissue, so the meat needs time rather than high heat to become tender.

Swap the lemon

How well each one fits the dish's main ingredients (beef, pork, onion, carrot, bread, wine, vinegar):

  1. Avocadofits better
  2. Grapefits better
  3. Plumfits better
  4. Lemonthe original

Fit is the average pairing score against beef, pork, onion, carrot, bread, wine, vinegar. Candidates are from the same food group and used in at least 100 recipes.
