Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat your oven to 350°F (175°C).

  2. In a bowl, mix the bread crumbs with salt, pepper, melted butter, cayenne, and chopped onion.

  3. Spread the mixture on one side of the beefsteak.

  4. Roll the steak up tightly and secure it with a skewer.

Roast and serve

  1. Roast the rolled steak for one hour.

  2. Remove from the pan and place on a hot dish.

  3. Thicken the gravy with 1 tablespoon of flour, strain it, and pour over the steak.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beefsteak
Forms the main body of the dish and, when roasted, provides the meaty flavour and texture.
Bread crumbs
Absorb the melted butter and onion, adding bulk and moisture to the stuffing inside the roll.
Melted butter
Adds richness and fat that carries flavour and helps the stuffing brown.

The step that matters

Rolling the steak tightly. A tight roll keeps the stuffing enclosed and the layers together during roasting. A loose roll lets the filling escape and cook unevenly, and the slices will fall apart.

Swap the onion

How well each one fits the dish's main ingredients (bread, butter, pepper):

  1. Capsicumfits better
  2. Tomatofits better
  3. Potatofits about as well
  4. Onionthe original

Fit is the average pairing score against bread, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
