Eggs a LA Tripe

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Boil the eggs for eight minutes.

  2. Slice the eggs with a warm, wet knife.

Assemble

  1. Butter a porcelain dish and add a layer of cream sauce.

  2. Layer the sliced eggs, then sprinkle with onion or shallot and parsley.

  3. Repeat layers until the dish is full, finishing with cream sauce on top.

  4. Sprinkle fine bread crumbs and bits of butter over the last layer.

Bake and serve

  1. Place the dish in a tin half-filled with boiling water and bake at 350°F (175°C) for fifteen minutes.

  2. Remove from the oven and sprinkle with hard-boiled yolk passed through a fine sieve before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Form the main body of the dish, setting into soft layers when baked.
Cream sauce
Adds moisture and richness, keeping the layers from drying out in the oven.
Fine bread crumbs
Form a crisp, browned topping over the final layer.
Butter bits
Add fat that melts over the crumbs, aiding browning and flavour.
Onion or shallot
Adds aromatic savoury flavour between the egg layers.

The step that matters

Slice the eggs with a warm, wet knife. Eggs are soft-textured and crumble easily. A warm, wet blade cuts clean slices, so the layers stay intact and the dish looks neat when served.

Swap the parsley

How well each one fits the dish's main ingredients (egg, butter, cream, sauce, onion, bread):

  1. Capersfits better
  2. Nutmegfits about as well
  3. Garlicfits about as well
  4. Parsleythe original

Fit is the average pairing score against egg, butter, cream, sauce, onion, bread. Candidates are from the same food group and used in at least 100 recipes.
