What each ingredient does

Eggs
Yolks enrich and thicken the base, and whipped whites add an airy, light structure.
Thin cream
Provides fat for a rich, smooth texture that stays soft when frozen.
Sugar
Adds sweetness and helps stabilize the beaten egg whites.
Rum
Alcohol lowers the freezing point, keeping the frozen dessert softer and scoopable while adding flavor.
Brandy
Alcohol lowers the freezing point, keeping the frozen dessert softer and scoopable while adding flavor.

The step that matters

Adding the brandy and rum when partly frozen. Alcohol does not freeze solid, so adding it too early or too late changes how firm the mixture gets. Beating it in slowly while partly frozen spreads it evenly and keeps ice crystals small, so the texture stays smooth rather than icy or hard.

Swap the nutmeg

How well each one fits the dish's main ingredients (cream, sugar, egg, rum, brandy):

  1. Nutmegthe original
  2. Cinnamonfits about as well
  3. Gingerfits less well
  4. Allspicefits less well

Fit is the average pairing score against cream, sugar, egg, rum, brandy. Candidates are from the same food group and used in at least 100 recipes.
