Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the chicken

  1. Preheat oven to 400°F (200°C).

  2. Remove pin feathers and singe the chicken.

  3. Slit the skin at the back of the neck and cut off the neck, leaving enough skin to hold the stuffing.

  4. Remove the organs carefully, avoiding the gallbladder, and wash the chicken inside and out with cold water.

  5. Stuff the chicken and truss it securely.

Roast

  1. Place the chicken breast down in a roasting pan, add fat, and roast for 10 minutes.

  2. Sprinkle with coarse sea salt and ground black pepper, dredge with flour, and pour stock or water around the chicken.

  3. Baste every 10 minutes and cook until tender, adjusting time based on the age of the chicken.

  4. Turn the chicken breast side up to brown.

  5. For an older bird, steam for an hour or more before roasting.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein, which firms and becomes tender as it cooks through.
Flour
Dredging coats the skin, helping it brown and crisp in the hot oven.
Fat
Conducts heat to the skin and promotes browning and a rich, crisp surface.
Stock or water
Poured around the bird, it creates steam and moisture in the pan that keeps the meat juicy.

The step that matters

Turn the chicken breast side up to brown. Breast meat cooks faster and dries out easily, so turning it upward only after the initial breast-down roasting lets the skin brown without overcooking the lean meat.
