What each ingredient does

Flour
Browned flour thickens the stock into a smooth gravy and adds a nutty, toasted flavor.
Stock
Forms the liquid base that gives the gravy its body and savory flavor.

The step that matters

Stirring the flour as it browns. Flour can scorch quickly over medium heat. Constant stirring browns it evenly and prevents burnt, bitter flavor, while still allowing the starch to thicken the gravy once liquid is added.

Swap the mace

The recipe marks mace as optional. How well each one fits the dish's main ingredients (flour, lemon, cream, white pepper):

  1. Nutmegfits better
  2. Tarragonfits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against flour, lemon, cream, white pepper. Candidates are from the same food group and used in at least 100 recipes.
