What each ingredient does

Sugar
Provides sweetness and body, and thickens the syrup as it cooks down.
Maple extract
Adds the maple flavour and aroma to the syrup.

The step that matters

Dissolving the sugar completely before cooking. Undissolved sugar crystals can seed recrystallisation as the syrup cools, leaving it grainy. Stirring until fully dissolved before simmering gives a smooth syrup.
