What each ingredient does

Cabbage
Leaves wrap the filling and become pliable when boiled, so they can be rolled.
Rice
Absorbs bouillon and meat juices, giving the filling a soft, moist body.
Beef or mutton
Adds protein and fat that give the filling savory richness and a firm bite.
Butter
Adds fat for richness and helps the rolls brown lightly in the pan.
Bouillon
Cooks the rice and braises the rolls, providing moisture and savory flavor.
Soya sauce
Adds salty, savory depth that rounds out the filling and sauce.

The step that matters

Boil the leaves slightly until tender. Leaves must be pliable enough to roll without cracking. Under-cooked leaves stay stiff and tear, while over-cooked leaves turn fragile and split during rolling and simmering.
