Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter and sugar together.

  3. Beat the yolks of the eggs into the creamed mixture.

  4. Whisk the egg whites until light and fluffy.

  5. Stir the Indian meal and nutmeg into the creamed mixture.

  6. Gently fold in the whipped egg whites.

Bake

  1. Pour the batter into a buttered cake pan.

  2. Bake for about 30-40 minutes or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich the batter and whites, whipped and folded in, add lightness and structure.
Butter
Creamed with sugar, it traps air and gives the cake its tender, rich texture.
Sugar
Creamed with butter, it helps trap air and adds sweetness and browning.
Indian meal
Cornmeal that adds body and a grainy texture to the crumb.
Nutmeg
Adds warm aromatic flavour to the cake.

The step that matters

Folding in the whipped egg whites. Whites hold air only when whisked to a light, fluffy foam. Folding gently keeps that air in the batter; stirring hard deflates it, leaving a denser cake.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, sugar, butter):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Capersfits less well
  4. Parsleyfits less well

Fit is the average pairing score against egg, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
